Many uses
I got this to use as a thickening agent but I rarely thicken things. More recently I've discovered it's usefulness in maintaining a nice consistency in my smoothies and other drinksI add a tiny bit and it seems to imulsify my smoothies, even better than lecithin. The coconut milk and nuts don't float on top like scum. It all stays mixed so nice, the small insoluble particles don't settle to the bottom.I just tried it in my keto coffee and it worked great in that as well. I only added a tiny pinch.It's been sitting on my shelf for awhile until I made an unusually stubborn smoothie that separated into layers. A little xanthan gum fixed it right up.I plan on getting another bag soonI store all of my powdered foods in lock-and-lock cannisters to keep from trying to reseal them. Sometimes I keep the stuff in the bag, sometimes I just empty the bag in the container, it depends on how much I keep and how often I use it.

Great value, add to gluten free baked goods
This is a better price than you can find in any physical store near me. The other day, I subbed gluten free all-purpose flour with a teaspoon of Xanthan gum for the flour in butterscotch oatmeal cookies. They turned out perfect-- chewy in the middle with a crispy edge. (Actually it was the first time I'd made them so I don't know what they'd be like with regular flour, but my whole family adored these.) It made a huge difference in how the gluten free cookie holds together and gives it a "bite" instead of being totally crumbly, which is a problem with GF baking.

Has many uses
Nice product. I use it in low carb baking. Used it as a thickening agent for gravy, homemade blueberry jam. By itself, there is no real flavor. You don’t need much, this will last a long time.

Finally homemade baked gf food!
Excellent. This has allowed me to eat bread again. Since going gluten free, yeast free, tapioca and potato free, finding something to make homemade bread stick together has been frustrating and difficult. This changed my life! A little dab'll do ya
Just a 1/4 tsp will thicken soups, stews, chili, what have you. Be careful not to add too much, or the gelatinous texture it produces will be disgusting. A little goes a long way.

Xantham Gum for Keto Bread
I haven't tried it yet but I was a bit disappointed at the huge bag filled with air mainly. This is an 8oz bag. I'll be back for a full review once I try it out.

It only takes a little
I bought this to use as a thickening agent for sauces and gravies in place of flour since it doesn't clump up, and I'm very pleased with it. I even used it to thicken spaghetti sauce since I can't stand a thin sauce over pasta. It dissolves instantly into the liquid and only needs a very small amount to do the intended job. Whenever I run out I'll definitely purchase again.

Improves homemade ice cream
I purchased this in hopes that it would keep my homemade ice cream from turning into concrete (the part that isn't eaten immediately and goes in the freezer). I use 1/4 teaspoon per quart of liquid and it really helped! Within just a few minutes of removing from the freezer the ice cream is now very scoop-able, and the texture is much smoother, not so icy.
